Yum-Oh!

This is my Cafe Rio fix. Thanks to my sister-in-law Naja! This recipe is simple and easy and a great substitute for the real thing. Fajita chicken, rice, black beans, lettuce, tomato, cilantro, crushed up lime tostito chips, a slice of lime, and litehouse salsa dressing. Yum!Yum! I recently found an imitation dressing for Rio's cilantro ranch dressing but havn't tried it yet. I can't wait too. Thanks Naja!

Café Rio Dressing
1 buttermilk ranch dressing packet (make as per recipe)
2 tomatillos (tomato like vegetable with a husk around them)
½ bunch of cilantro
1 clove garlic
Juice of 1 lime
1 jalapeño (Use the seeds too if you like it spicy. You could substitute a few drops of green tobasco for the jalapeno.)

Use a food processor to blend all the ingredients well. Refrigerate.

I am a busy mom of five, as all moms are. Yay for moms! My husband, myself and the kids are currently living in Utah. I spend most of my time taking care of our five young children at home. In my spare time I like to sleep! I also try to make time for reading, taking pictures of my family, experimenting in the kitchen, shopping, eating ice cream, and watching movies. I love movies! I don't have time for T.V. anymore but I try to catch a movie when I can.
