Happy Birthday!

April 7th was aunt Heather's Birthday. We went to her and uncle Mike's house for dinner and cake. Yeah for the big 30! Thanks to Mike we had an awesome dutch oven dinner! Yum! It's never too early for breaking out the dutch oven's. We all had a good time. Happy Birthday Heather!

But WAIT!! It was someone else's birthday too. Happy Happy Birthday to you Mom! We wished we could have all celebrated with you too. We won't mention the number though, right Mom. Ha Ha. Just kidding. Happy Birthday to the youngest, most beautiful mom! We love you!

Family Fun!

You would think we were slave drivers in our house! Here's Braden giving Daddy a back massage with the motorized massager. Look how happy he is! He really said he WANTED to. Go figure! And here's Gracie standing by in her Barney pajamas and "balloon" the doctor gave her today. What a fun family!?

Yum-Oh!

This is my Cafe Rio fix. Thanks to my sister-in-law Naja! This recipe is simple and easy and a great substitute for the real thing. Fajita chicken, rice, black beans, lettuce, tomato, cilantro, crushed up lime tostito chips, a slice of lime, and litehouse salsa dressing. Yum!Yum! I recently found an imitation dressing for Rio's cilantro ranch dressing but havn't tried it yet. I can't wait too. Thanks Naja!

Café Rio Dressing
1 buttermilk ranch dressing packet (make as per recipe)
2 tomatillos (tomato like vegetable with a husk around them)
½ bunch of cilantro
1 clove garlic
Juice of 1 lime
1 jalapeño (Use the seeds too if you like it spicy. You could substitute a few drops of green tobasco for the jalapeno.)

Use a food processor to blend all the ingredients well. Refrigerate.

Under Contract!

This is it! We went under contract just barely today. We hope everything works out with our house in Colorado and the purchase of this one. This is a 3 bedroom 2 bath home with a full unfinished basement. (3381 totalsq.ft.) The outside has not been finished with paint and trim yet but will be soon. I'm dying to get in and set up the nursery. Patience! Where can I get some of that?!

It's a BOY! It's a GIRL! It's double the fun! We are so excited to have one of each. Two boys and two girls. It couldn't be more perfect! They are measuring right on with the girl being one day ahead of the boy. You go girl! I can't wait to work on the nursery. It will be a little challenging with color and theme but much fun to figure out. Any ideas? So far we only have two boy and two girl names picked out. That's probably all we'll come up with too. Any suggestions? Kyle and Naja have already been submitted just so you know. (Thanks Kyle and Naja!

Welcome to Bloghood

Here I go! My first voyage into bloghood. Thanks to our friends we have now decided to enter this world of blogging. We figured now might be a good time. Most of you already know our exciting and insane news of being pregnant again! With Twins! That makes Braden who just turned 3 in March. Grace who will turn 2 in May, and two newborn infants due at the end of July! If anyone knows the name of a good psychiatrist now would be a good time. So yes, this leads us to The Eskelson 6. Let's see you do that in just 5 wedded years. Not that we recommend it of course!

You may also want to know that we just recently moved back to Utah. Vernal, Utah that is..... Brandon works for the local phone company UBET. He absolutely loves his job and the people he works with. He is so happy! We have also enjoyed being so close to family again. Thanks to everyone who helped us to get here!
